When I first came to this country nearly 20 years ago, I was very fortunate to work for one of the biggest exhaust cleaning companies in Southern California. The accumulation of dust, vaporized grease, vermin droppings and other contaminants can adversely impact the sanitation of the overall environment and restaurant hygiene.
That's why it's important to clean the entire up-blast fan, including the fan blades, back of the fan blades, the air band (bowl) and the grease trap with a non-etching, degreasing foam. (Fan will be scraped if needed.)
Vertical duct work, horizontal duct work, plenum and filter gutter will then be cleaned with foaming degreaser and allowed to dwell. Any remaining buildup in the system will be scraped or chiseled out.
Exhaust Fan Cleaning
The science of commercial kitchen ventilation includes both exhausting air as well as providing replacement air within the cooking area.
Whether a restaurant is a small free-standing site or a large institutional kitchen, managing and balancing airflow is a complex issue. It is a challenge to properly ventilate commercial kitchens, as they require moving large volumes of air through duct-work and equipment placement in very restricted spaces.
That's why we pride ourselves in being thorough - often times having to clean sections others have overlooked - with our best practices and cleaning technology.
For most commercial applications, this means the exhaust hood will need to be cleaned via hand scraping about once a month. The accumulation of vaporized grease is not only unsightly and unsanitary, it also creates the high potential for the propensity of kitchen fires.
Fast food restaurants or kitchens that deal with a lot of fried food will generate more vaporized grease and require more frequent cleanings. Though the exhaust hood is the most visible part of your exhaust system, it’s not the only place where dangerous grease buildup can occur. We encourage all of our clients to supplement their monthly hand scraping with semi-annual steam cleaning.
